Beet and Potatoes by Surie Weinberg RHN: 
4 red beets
2 golden beets
2 med potatoes
1 bunch parsley
3 dill pickles
2 Tablespoons pickled capers (optional)
2 Tablespoons Olive oil
1 large lemon juiced

sprinkle a little oil and kosher salt on beets and potatoes
wrap up beets and potatoes in parchment paper and bake on 375.

Potatoes will be done sooner.

when all is cooled peel all the potatoes and beets and cube into 1 inch cubes

cube pickles as well

wash parsley and check well and chop or put in food processor

mix all ingredients together, serve warm or cold.

APPLE PIE from Empire Kosher Recipe Corner
"YOUR AUNTIE RIVKA IS TOO LAZY TO BAKE A CRUST" APPLE PIE All you need for this pie is a pie plate, a fork to combine ingredients and a knife to cut the apples. You DO NOT peel or core the apples. Simply wash them! Preheat the oven to 350F. 5-6 apples, whatever type you prefer tart or sweet 1 tbsp sugar AND 1 tbsp cinnamon combined together. Cut the apples into slices and place in a pie plate. Sprinkle the cinnamon and sugar mixture over the top of the apples. OK you can core the apples if you insist! 1 egg 1 cup flour 1 cup sugar 1 cup melted parve margarine (or use butter if you want Milcheg) Combine the above ingredients together until they are will mixed and pour over the apples. Bake the "pie" at 350F for 35-40 minutes. The crust will form as the pie is baked!

Scalped Potatoes - Empire Kosher Recipe Corner
Auntie Rivka's "Scalped" Potatoes (Milchig) 6 peeled and thinly sliced potatoes 2 thickly sliced onions 2 cups milk (skim for those of you on a diet) 1/4 cup flour 1 tsp. salt 1/8 cup dried dill for a lovely flavour 1/4 tsp. pepper (to annoy Uncle Leibel) 1/8 tsp. dry mustard Grease a covered baking dish. Preheat oven to 350F. Mix the flour into the COLD milk and stir until the flour has been dissolved. Add the salt, pepper, mustard and dill. Slice half the potatoes and the onion and place in layers in the greased casserole dish. AUNTIE RIVKA POTATO HINT: In order for the potatoes not to turn black after you have peeled them, place them in cold water while you prepare the rest of the recipe. Bring the milk mixture to a rapid boil on the stove stirring CONSTANTLY to prevent burning! Reduce heat to a simmer until the mixture thickens. Pour HALF the mixture over the potato and onions. Place the remaining potatoes and onion in the casserole. Pour the remaining thickened liquid over the potatoes and onion. COVER. Place in the oven and bake for about 45 minutes until the potatoes are done. For an added touch, uncover for the last few minutes of cooking to form a golden brown crust. Slices of processed cheese can be added on top and the casserole returned to the oven for a period of 2 to 3 minutes simply to melt the cheese!

4 tsp. Kosher (coarse) salt 5 lb. flour (Kolbo’s is best) 3/4 cup oil warmed in microwave till warm 1 generous — 1 1/2 cup sugar 4 TBS. Eagle dry yeast (available at Kolbo too and is supposed to be the best) 5 1/2 cups warm water 1/2 extra cup of water if needed Knead all ingredients together, including the dry yeast (no need to activate). Let rise for about 1 hour and then braid. Let rise again for 1 hour. Glaze with egg, sprinkle seeds of streusel Put into preheated oven 400 for 5-10 minutes then lower to 350. Bake till golden
