	Send Us Your Recipes Recipe Highlight: beets and potatoes by surie weinberg RHN Beet and Potatoes by Surie Weinberg RHN:  4 red beets 2 golden beets 2 med potatoes 1 bunch parsley 3 dill pickles 2 Tablespoons pickled capers (optional) 2 Tablespoons Olive oil 1 large lemon juiced sprinkle a little oil and kosher salt on beets and potatoes wrap up beets and potatoes in parchment paper and bake on 375. Potatoes will be done sooner. when all is cooled peel all the potatoes and beets and cube into 1 inch cubes cube pickles as well wash parsley and check well and chop or put in food processor mix all ingredients together, serve warm or cold.
